Ingredients
- 1 can Uncle Luk Abalone
- 1 cup white rice
- 3 to 4 slices ginger
- 2 to 3 cups chicken broth
- 1 tbsp goji berries
- 4 to 5 pieces dried scallops
- 1 tbsp salt
- 1 tbsp sesame oil
- A pinch of white pepper
- Spring onions or Fried shallot
Method
- Add the rinsed rice, dried scallops (along with the soaking water), ginger, abalone juice, and chicken broth to a large pot.
- Bring the mixture to a boil over high heat.
- Once boiling, reduce the heat to low. Let it simmer until the porridge reaches your desired consistency, stirring occasionally to prevent sticking. This process will take at least 30 minutes for white rice. You may need to add more water as it cooks.
- 5-10 minutes before turning off the heat, add the cut abalone and goji berries. If using other proteins like fresh shrimp or scallops, add them now and simmer until cooked through.
- Taste and season with salt. A pinch of white pepper can be added for extra flavour, but use it sparingly as it can be strong.
- Ladle the porridge into bowls. Drizzle each serving with sesame oil and garnish with sliced ginger and spring onions or fried shallots.
- Heat some oil in a separate pot and stir-fry the ginger and the white parts of the spring onions until fragrant.
- Add the rinsed rice grains and stir-fry for a minute. If using carrots, add them at this time.
- Pour in the chicken stock, scallop soaking water, abalone juice, and soaking water or honey date (if using) into the pot. Add the soaked scallops and bring to a boil over high heat.
