Ingredients:

  • 1 can Uncle Luk abalone
  • 1.5 oz dried shiitake mushrooms
  • 1 lb fresh lettuce
  • 1 clove garlic
  • 1 tbsp corn oil
  • 2-3 slices fresh ginger

For blanching:

  • 5 to 6 cups water
  • 2 tbsp corn oil
  • 1 tbsp salt

Braised sauce:

  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp salt
  • 2 tbsp tamari soy sauce
  • 2 tbsp sugar
  • 2 tbsp cornstarch
  • 0.5 tbsp white pepper

Method:

  1. Soak the dried shiitake mushrooms in warm water for 30 minutes to soften and clean them up.
  2. Wash and cut the lettuce, then let it drain in a colander.
  3. Mix the sauce ingredients: oyster sauce (1 tbsp), soy sauce (1 tbsp), tamari soy sauce (2 tbsp), sugar (2 tbsp), salt (1 tbsp), water (2 tbsp), white pepper (0.5 tbsp), and cornstarch (2 tbsp). Stir well.
  4. Remove the stems from the soaked mushrooms.
  5. Smash and peel the garlic clove, keeping it whole. Slice the ginger thinly.
  6. Boil 5 to 6 cups of water. Add corn oil (2 tbsp) and salt (1 tbsp). This will season the lettuce and keep it bright and shiny. Prepare a bowl of cold water for blanching.
  7. Blanch the lettuce in two batches, cooking each for 40-50 seconds until bright green. Transfer to the cold water to stop cooking, then drain. [Tip]: Open the Uncle Luk can of abalone now.
  8. Heat 1 tbsp of corn oil in a wok or pan over high heat. Add the garlic and ginger, cooking for 30-40 seconds. Reduce heat to medium, then add the mushrooms, cooking for another 30 seconds.
  9. Add the abalone to the wok. Cover and heat for one minute until warm.
  10. Uncover the wok and add the sauce, stirring constantly. Cook until the sauce thickens. Finish with a drizzle of sesame oil (1 tbsp).
  11. Arrange the lettuce on a serving plate, layer the mushrooms over the lettuce, and place the abalone pieces on top. The sauce will enhance the flavor of the lettuce. Serve and enjoy this luxurious dish.
